This two-minute chia seed pudding recipe is a perfect snack option, or a nutrient-packed breakfast idea. It takes minimal ingredients and effort, plus you can feel free to add whatever toppings you like!
Ingredients
1 cup non-dairy milk
3-4 tablespoons chia seeds (add 4 if you prefer a thicker consistency)
1/2 teaspoon cinnamon
1 teaspoon vanilla
Instructions
Add the chia seeds and non-dairy milk to a bowl, or storage container and mix well.
Once the chia pudding mixture is well combined, add the cinnamon + vanilla and stir well.
Cover and place in the fridge for at least two hours (preferably overnight).
When ready, the pudding should be nice and thick – if it’s not, you can add in more chia seeds.
You can top with whatever you like; I chose half a banana, homemade granola, pumpkin seeds and peanut butter.
